WHAT IS ARROZ CON POLLO (CHICKEN RICE)

 

Arroz con Pollo is a very latin american dish, with several variations from country to country, all sorts of can vegetables can be added to it in addition to dice tomatoes and celery and other stuff for added flavor. We grew up eating it in Panama and most of the time its found in every corner of the country since rice is one of hours biggest carb contributors back home.

 

Ingredients 

  • about a cup of Crisco

  • 2 bay leaves

  • 15 oz tomato paste

  • 4 cups cooked rice

  • 1 bunch parsley (chopped)

  • 1 tsp saffron

  • 2 tsp onion Powder

  • salt and pepper to taste

  • 4 cloves garlic (chopped)

  • Green olives

  • Water

Directions

  1. Brown chicken in crisco.

  2. Then add tomato sauce, parsley, onion powder, garlic, bay leaves, saffron, salt and pepper.

  3. Simmer until chicken is tender..

  4. Remove chicken and add rice.

  5. Cook on medium high until liquid is absorbed.

  6. Then cover tightly and steam until rice is done.

  7. Arrange chicken around the sides (or remove chicken from bones and add to rice) parsley may also be used to decorate.
