Place pork cut potatoes between two sheets of paper.
Meat miles or small, heavy skillet, weighing up to 1/8 inch (30mm) thick.
Fill the sides of the pork with salt and pepper on both sides. In a large saucepan, add 2 tablespoons (30 ml) of oil to a medium height.
Working in two steps, add pork to the pan and cook, stirring once, until golden brown, about 1/2 to 2 minutes per side. (If the pan is dry, add more oil.)
Transfer to a platter. Sprinkle lemon juice on pork and sprinkle with pepper. Spray with Parmes curves and petals.
Serve with lemon sauce and mustard.
